Diwali Special Malpua Recipe: Although traditional sweets are made on Diwali, but if you give some new twist to them then even the children of the house will like to eat them with pleasure. So why not give a little twist to the traditional recipe of Malpua. Actually, children like the sweetness of chocolate and the creamy texture of cheese. And if the crunch of dry fruits is given in it, then the combination of these three will not only be liked by both children and adults but will also be good for health. This recipe is easy, quick to prepare and looks very attractive when served. Come, let us know step-by-step how to make it.

Ingredients (for 6-8 servings)
Maida (all-purpose flour) – 1 cup
Semolina – 2 tbsp (optional)
Paneer (crumbled/Indian Paneer) – 1/2 cup (finely grated or mashed)
Milk – 3/4 cup (or as per need)
Sugar – 1/4 cup (lightly sweet in batter)
Cocoa powder – 2 tbsp (for chocolate version)
Chopped dry fruits (almonds, pistachios, raisins) – 1/3 cup
Baking soda – 1/4 tsp (or baking powder 1/2 tsp)
Cardamom powder – 1/4 tsp
Oil or ghee – for frying
For sugar syrup – sugar 1 cup and water 1/2 cup
A few threads of saffron (optional)
Cardamom – one

Recipe – Step by Step-

Prepare Sugar Syrup
Add 1 cup sugar and 1/2 cup water in a pan. Heat on medium flame until the sugar dissolves completely. Once it boils, cook for 4-5 more minutes so that a light syrup is formed. If desired, add saffron and cardamom. Remove the syrup from the flame and keep it aside.

Heat oil or ghee in a pan on medium flame. Take a small ladle or spoon and slowly drop the batter into the hot oil. You can make small round Malpua. Fry until golden and crisp on both sides. The paneer batter remains a little softer, keep in mind that the flame should remain medium so that the middle also gets cooked well.

Dip in syrup and serve
Immediately dip the fried Malpua in hot syrup for 10-15 seconds so that the syrup gets absorbed inside. Then plate in a plate. Serve by adding crushed dry fruits and some rabri (if available) on top. The chocolate version can also be sprinkled with chocolate chips.

Serving Tips

-Adding cheese makes Malpua soft and rich.
-If you want a healthy option, then bake on gas or make light crisps in the air-fryer.
-Do not keep the syrup too thick, a slightly flowing consistency is better.
