Stumbled upon a recipe for dumplings and dates that promises a culinary adventure. Ingredients for Lamb Dumplings:
- Lamb mince: 500 grams
- Chopped Onion: 50 grams
- Chopped Garlic: 10 cloves
- Chopped green chilli: 1 tsp
- Garam masala: 1 teaspoon
- Chopped mint leaves: 2 tbsp
- Coriander leaves: 2 tbsp
- Chilli Flakes: 1 tsp
- Egg: 1
- Breadcrumbs: 50 grams
- salt to taste
- Onion chopped into cubes: 100 grams
- Seedless dates cut in half: 10 dates
- Green capsicum cut into cubes: 100 grams
Ingredients for Lebanese Salsa:
- Ripe tomatoes cut into cubes: 5 tomatoes
- Olive oil: 3 tbsp
- Chopped Onion: 2 tsp
- Chopped Garlic: 1 tbsp
- Chilli pieces: 1 pinch
- Ajwain: 1 pinch
- Chopped mint leaves: 1 teaspoon
- Sugar: half teaspoon
- salt to taste
Method:
Lamb Dumplings
- Mix all the ingredients from lamb mince to salt well in a bowl.
- – Make small pakodas and keep them aside.
- Take a wooden skewer and pierce a dumpling in it, then a piece of onion, green capsicum and a piece of seedless date. Repeat this with 3 dumplings.
- Place all the pakodas diagonally in the same manner on the oven tray.
- Preheat the oven and place the skewered lamb dumplings in the tray and fry them until cooked.
Lebanese Salsa
- In a saucepan, heat olive oil and sauté onion and garlic until golden brown.
- Add chilli pieces and parsley.
- Add chopped tomatoes and mix. Cook on low flame until the sauce thickens.
- Now add chopped mint leaves, sugar and salt to it.
- Set aside to use with skewered lamb meatballs.
Plating:
- Spread tomato salsa in the center on a serving plate.
- Place three roasted skewers on top, as shown, and drizzle a little virgin olive oil on top. Serve hot with other dishes.
