According to the leadership of the Department of Health and Human Services, food companies have to blame – they are engineering their snacks, fast food and sweets so that we do cocaine and nicotine in the same way. The approach came on a recent episode of Bill Maher’s show, during a discussion with Casey Means, the nominated person of President Donald Trump for Surgeon General, who also argued that junk food was sometimes an engineer to hook people. Maher said, while combating McDonald’s, it is “tasty” and that is why people choose to eat it – there is no need for fancy science to explain this.

There is a reliable evidence that our obesity rate is related to our heavy consumption of 40%-Fast food, packed and immediate food items, sweets and sweet drinks-all recently lured into a huge category of ultra-agreed food. According to the Disease Control and Prevention Center, these so -called UPF make about 53% of the average American diet.

Research-scientists by Kevin Hall who quit their NIH jobs-added food items to gain weight, but the reasons were basically more complex than ideas.

In the study of the hall, volunteers limited to a food laboratory were fed one of the two diets. One included most of the ultra-related foods-Tuki bacon, fries, instant noodles, chicken nuggets and similar items. Other other were mainly minimum processed foods. Participants were allowed to eat as much for two weeks, then turned into other diets.

During the ultra-processed phase, the participants consumed an average of 500 more calories in a day and received a average of a few pounds. The diet consisted of equal amounts of protein, carbohydrates, fat, sodium and even fiber – so those components could not be blamed for weight gain alone.

The hall said the volunteers were asked whether the ultra-sensitive diet was tasty or more pleasant to eat, and they reported that both diets were equally attractive. This underlines the simple perception that causes junk food, as it is tasty. “Something more interesting is going on,” he told me.

The language of addiction is common in NIH-sponsored science and political rhetoric. In a Senate hearing last year, former Commissioner of Food and Drug Administration, Robert Calif told the senators that the food companies were making drug addiction products, and HHS Secretary Robert F. Kennedy Junior deliberately blamed the industry for Americans with his products.

Since publishing the results of his study in 2019, the hall is working to explain what is “something more interesting”. In 2023, he and a team of colleagues made an additional analysis of the original data and found an important clue. Researchers found foods that people followed by a pattern: they were usually high in sodium and starch, sweet and fatty, or fatty and high in sodium, according to the high, Terra Fazino, a psychological and addiction expert at Kansas University who was part of the team. He defined these foods as a “hyper-malleable”.

In another experiment, the hall tried to go to the question of drug addiction. Participants vary in body shapes, from thin to thick. According to the hall, some individuals demonstrated an increase in dopamine. However, the response was not correlated with their obesity levels.

He said that NIH initially planned to issue a press release on the study, but then pulled back. Later, he received a call requesting an interview from the New York Times – and the press office officials forbade him to talk with the reporter. When he released a written statement in response to the Times, he said that it was replaced by the agency to fulfill the size and importance of the study.

The hall said that HHS leaders, who oversee NIH, did not want him to talk about his work, “because it went against the story that ultra-like food items are addictive.” HHS spokesperson Andrew Nixon said via email that “at any point Dr. Hall did not have the ability to share or advocate for his views – his educational freedom and free speech was fully honored,” and he called the hall’s concerns “fake news”.

But it is in line with the story of the hall what he has told other news outlets. He has also spoken to reporters about the previous work – as is opposed to communicating through a written statement in this case.

For some experts, there is no question that food addiction is real. Ashley Gearhart, a addiction expert at the University of Michigan, said, “I have treated people who have this mandatory relationship with these ultra-agreed foods.” Sometimes people eat until they become ill, he said, and he sees similar crawings and compulsory behavior with junk food that runs alcoholics. And people do not promote apple or avocado or chicken thighs. It is almost always things like pizza, candy bar, ice cream or donuts.

But it still does not explain why participants in the hall study ate those additional 500 calories. In ongoing research, the hall and their allies are comparing the diet of ordinary ultra-managed foods that contain foods that have been improved so that they are not “hyper-plateable”. He is also examining caloric density, which is a feature of ultra-related foods, which people do more.

Preliminary results suggest that there are ways to make inexpensive, convenient and shelf-stable food that are less delicious than traditional ultra-processed fare, but will not pack on pounds. This is a result that does not blame – and real changes can occur that actually makes us healthy.
