A French biochemist, NYT Bestseling writer, and health worker Jesse Inchspe, and a health worker known as Glucose Devi on social media, have explained how pasta is cooked, directly affect blood sugar spikes. In an Instagram post from 15 September, the biochemist used the glucose graph to highlight how blood sugar spikes are separated than pasta when the pasta is eaten. He also shared simple hacks to help reduce glucose spikes on eating pasta.

According to JC, “Pasta is about 75% starch and starch glucose is just chains of molecules.” When we eat pasta, starch breaks into glucose and is absorbed, which directly affects the level of blood sugar.
