Method: Start by making the caramel. – Put jaggery and water in a vessel and heat it on medium flame. Keep stirring continuously to avoid burning. When the mixture thickens and turns dark brown, remove from flame and keep aside to cool. In a separate bowl, gently whisk together the eggs, honey (or jaggery), and vanilla essence (or cardamom powder). Add milk to egg mixture, making sure milk is room temperature (not cold). Strain the milk mixture into the cooled caramel using a fine mesh strainer to ensure the smooth texture of the pudding. Then steam the mixture in a large pot with 3 cups of water for 40 minutes: 10 minutes on high, then 30 minutes on low. Let the halwa cool at room temperature and refrigerate for 4 to 5 hours. When cooled, run a knife around the edges of the halwa to loosen it and invert it onto a plate. Serve it cold.
