Whether it is eating a hearty plate of royal cheese or spicy chilli cheese, isn’t we all a deep love for this dairy happiness? But recent reports show that not all the cheese serves in restaurants or sold in markets that seem so. Discussion around fake cheese is increasing health concerns.
Recently, the popular YouTuber Sarathak Sachdeva accused the interior designer’s Gauri Khan (actor Shah Rukh Khan’s wife) Upskale Mumbai restaurant, Tauri, of serving fake cheese.
In a video that has over 6 million views, he exclaims, “Shah rukh khan ke restaurant mein paneer nakli tha. Ye dekh ke mere toh hosh udd udd gaye the!”
In response, the restaurant remarked: “Iodine test reflects the presence of starch, not the authenticity of the cheese. As the dish is soya-based material, this response is expected.
This is not the first time that fake cheese made headlines. In October 2024, a man from Gurugram claimed that a company was selling ‘fake cheese’ to the restaurant through Zomato Hyperpur. The product was labeled ‘analog cheese’, designed for tikkus and gravy dishes.
It has once again discussed how many of us are consuming large amounts of analog cheese inadvertently, which is also known as synthetic cheese. But what exactly is it?
Often known as analog cheese or synthetic cheese, this fake version mimics the texture of real cheese but lack its nutritional value. It can be made from starch, hydrogenated fat, or even synthetic milk, which causes serious health risk to consumers.
The head of liver transplant and surgical gastroenterology at PSRI Hospital. Manoj Gupta warns, “Fake or adulterated cheese may contain non-food-grade chemicals such as urea, caustic soda, or even detergents. Consuming these substances can be toxic over time, especially over time.
According to him, what risk you can take: digestive issues such as nausea, swelling, stomach cramps, or diarrhea. Other issues may be the stress of liver and kidney, poor nutritional value, cardiovascular health risk.
Nutritionist Nandini Kumar, some easy to ensure the authenticity of your cheese, suggest tests:
Hot water test: Place a piece of cheese in warm water for 5-10 minutes. If you notice an oily or soap film, it may have synthetic material or detergent.
Examination of smell and taste: Real cheese has a light, milky aroma and neutral taste. Sour, bitter, or chemical -like smells are red flags.
Rub test: Rub a small piece between your fingers. If it feels unusually smooth or slippery, it can indicate starch or synthetic fat.
Iodine test (for starch): Crush a piece of cheese and add a few drops of tincture iodine. A blue or black color change confirms the presence of starch.
Lentil powder test (for detergent): Boil the cheese, let it cool down, then add a pinch of pigeonpea powder. A red color suggests detergent or urea contamination.
Cooking behavior: The actual cheese retains its shape and is slightly brown when cooked. Fake versions can melt, leave oil, or separate.
Check the label: Real cheese should only list milk or milk solids. Avoid products that refer to starch, vegetable oil, or “cheese analog”.
Dietician Ankita Sehgal says, “Choose cheese only from reliable, FSSAI-prohibited sources. When doubt, make it at home. Cheese is surprisingly easy-milk milk with lime juice or vinegar and stress. Milk milk. Fresh, pure and safe!”
Here is the exact recipe:
