However, a possible solution has been presented by Dr Rupi Aujla, a London-based doctor specializing in general practice and emergency medicine. On Instagram on November 7, she shared the recipe for vegan walnut brownies, a dessert she described as “both delicious and nutritious.”

There are three key ingredients in the recipe:

  • Chickpea – Rich in prebiotics to support gut and immune health
  • Dark chocolate – rich in antioxidants called flavonoids, which help protect the heart by reducing inflammation
  • Nuts – Aids heart and brain function

Each brownie is packed with nine grams of protein and eight grams of fiber. Since this is a dessert, this recipe uses both maple syrup and brown sugar, but Dr. Aujla assures that their amounts per serving are quite small.

Ingredients for Vegan Walnut Brownies:

  • 1 box of gram, drained and washed
  • 60 ml maple syrup
  • 100 grams almond butter
  • 30 grams brown sugar
  • 4 tbsp cocoa powder (raw)
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 75 grams dark chocolate (80%) chopped
  • 50 grams chopped dry fruits as per choice
  • sprinkle small pieces of sea salt

Method of preparation:

  1. Gather and prepare your materials. Preheat the oven to 180°C/160°C fan. Line a 12x21cm loaf tin with parchment paper.
  2. Place all ingredients except dark chocolate, almonds and flaky salt in a food processor and blend until smooth.
  3. Add chocolate pieces and chopped almonds and mix. Reserve a small handful of each to sprinkle on top, if desired.
  4. Scrape into the tin and sprinkle with remaining almonds and brownies, if desired.
  5. Bake for 25-26 minutes. If desired, sprinkle with flaky sea salt when removing them from the oven.
  6. When done, they will have risen slightly and should be somewhat firm to the touch in the middle of the tin.
  7. Let cool before slicing. They’ll get sticky – scrape a knife between the slices to keep things neat.
