A ‘pilgrimage’ – that’s what Jeff Bezos called it – to a desi fusion meal carefully prepared by Vikas Khanna for him and partner Lauren Sanchez when the two found themselves at the culinary genius’s Michelin-starred restaurant, Bungalow, in New York.
The bungalow has played host to many prestigious names over the years. Shahrukh Khan in the past and Sarah Jessica Parker recently are among them. Coming back to the food, when the head of Amazon describes the food as amazing beyond words, you can’t help but want an extreme of the mouth-watering menu. So here we have it for you – mainly Bengali Kasundi Tandoori Avocado, Bihari Sattu Roti, Udipi’s Pineapple Mainsky, Gujarati Tindora Pickle, ‘Nagaland’ Black Rice Pudding, Indore-inspired Dahi Kebab, Jewish-Indian Chicken Chitrani and Sindhi Style pickles are included. Potato; Dessert was millet chocolate cake with delicious gulab jamun ice cream. Ahmedabadi fennel stood last in the list.
Now while we can’t promise you recipes that will help you nail the fusion talent that most menus boast, there are some items you can realistically achieve in your own kitchen. So here they are, full of quick and easy recipes.
Bihari Sattu Roti
Material: Whole wheat flour – 2 cups, water – 1/2 cup; For Sattu Stuffing – Sattu flour – 2 cups, chopped onion – 1, garlic cloves – 6, chopped green chilli – 1, chopped ginger – 1 inch, nigella seeds and celery – 1/2 teaspoon each, mango Pickle masala – 2 tbsp, mustard oil – 1.5 tbsp, salt as per taste, juice of 1 lemon; ghee for frying

Method: Knead the dough as you want and prepare the stuffing on the side. Follow the potli method before rolling out your dough balls and cooking them in ghee.

Indore’s Dahi Kebab
Material: Hung curd – 1/2 cup, Paneer – 1.25 cup, Fried onions – 1/2 cup, Chopped cashew nuts – 3 tbsp, Finely chopped coriander – 2 tbsp, Bread crumbs – 5 tbsp, Garam masala and chilli Powder – 1 tsp, chopped green chilli – 2 tsp, a pinch of sugar, salt as per taste, bread crumbs for rolling, oil for frying

Method: Simply mix all the ingredients and divide the sticky mixture into balls. Roll them in bread crumbs and deep fry. Serve immediately with green chutney.

Black rice pudding (considered to be from Manipur)
Material: Black glutinous rice – 3/4 cup, water – 1 cup, milk – 2.5 cups, sugar – 1/2 cup

Method: Wash the rice and soak it for 4 to 6 hours or overnight. Cook the rice in a pressure cooker with water and milk for 3 to 5 whistles. Let the pressure release naturally and then pour into a pan. Add sugar and about 1/2 cup more milk. Let it boil for 5 minutes before removing from heat. Serve chilled or at room temperature.
